Focaccia Garden
This recipe was inspired by Forks Over Knives’ Festive Sourdough Focaccia recipe.
Loving spring & flowers, I couldn’t think of a better recipe to recommend for a special dinner or brunch with family and friends.
My mother and I had a wonderful time playing around with creating flowers out of vegetables and designing our little “fairy garden” on a sheet of parchment paper while we waited for our oven to heat up.
To make this recipe work with our day, we opted for using a pre-mixed focaccia bread mix. The mix we used was Delallo Italian Pizza Dough Kit. It worked just fine for the focaccia garden.
Ingredients:
1 package of Delallo Italian Pizza Dough Kit
1 9 X 13 Glass Pyrex
1 container of pearl tomatoes
1 bag of mini bell peppers
1-3 baby bella mushrooms
1-3 stalks of long stem broccoli
1/4 of onion or shallot
1 tbsp Olive Oil
Add herbs and other vegetables of choice. For example, we used dill, rosemary, basil, a Mediterranian salt blend, black pepper, olives, and chives.
Directions:
Follow directions from the dough kit. As the bread rises, play around with predesigning your garden.
Preheat oven to 450 degrees.
Once the bread has set for 45 minutes and the oven is ready, spread 3/4 of the dough out on your lightly greased pyrex. Then add your garden scene to the top of the dough. Slightly pressing ingredients into the dough.
Pop in the oven for 20 minutes.
You can save the other 1/4 of the dough for another day or make a mini pizza with your leftover veggies!
