Annual Protein Packed Bunny Pancakes

On Easter Sunday, or as it should be called Ressurection Sunday. Our family has started a tradition of making protein pancakes. But these are not just any pancakes.

For years I have not enjoyed pancakes. Feeling uncomfortable, bloated, weak, and tired after consuming a traditional pancake I chose to forgo eating them.

Until a few years ago when I started experimenting with making recipes healthier!

Protein pancakes leave me feeling energized, fueled, and mindful to attack my day. This year for instance, after eating these yummy pancakes I spent hours outside pruning the garden feeling satisfied and happy.

One TIP! Last year I used tinfoil to make the bunny shape… this year with encouragement from my sweet mother, I realized I can easily pour the bunny shape and use a spoon or utensil to help shape the ears if needed. So if you see below, opt for not using the tinfoil! Less waste is a good thing :)

The recipe below was inspired by Running on Real Food’s Fluffy Protein Pancakes.

Ingredients:

1 cup all-purpose flour

1/4 cup (28 g) vegan protein powder of choice

1 tbsp baking powder

1/2 tsp sea salt

2 tbsp maple syrup. See notes

1 soft, slightly browned banana

1 cup water, plus more as needed

Directions:

Mix the flour, protein powder, baking powder, and salt in a bowl.

Add the maple syrup or sweetener of choice if using, then slowly add the water, mixing until “just mixed.” It should be a little lumpy and quite thick but still pourable. Add a little extra water if needed.

Then, mash the banana then add it to the mix and stir until combined.

Allow the batter to rest while you heat a pan over low to medium heat. Use a little cooking spray or a good non-stick pan and scoop about 1/4 cup of the batter onto the pan for each pancake.

Cook until bubbles start to appear and the edges of each pancake look dry and firm. Flip and cook for 1-2 more minutes.

Enjoy right away with your favorite pancake toppings. Leftovers can be stored in the fridge or freezer and reheated as needed.
