Oat & Date Breakfast Bars

I had an extremely special night tonight. A lot of it had to do with the fact that I completely spent time doing what I love, and being embraced in God's presence! I have been practicing to completely surrender and give time to God by resting in his love. I felt like during that practice, this evening, I was given a new sense of peace and relaxation that I haven't felt before.

This became evident to me because I was effortlessly doing things I love without second guessing myself or wondering if I should be somewhere or be doing something else... I found myself naturally being perfectly ok with where I was; alone making this recipe, and starting my first kombucha brew. Then again, alone walking with God on the shores of Lake Michigan I felt complete peace and gratitude. 

Anyway, in these posts I aim not to share too much information, and get straight to the recipes. I hope you enjoy these breakfast bars and have fun making different variations for yourself!

Oat & Date Breakfast Bars

These are the perfect breakfast; just add a banana or your favorite fruit and you're good to go!

A 4 ingredient base is all you need...  I encourage you to make them your own with additional ingredients. 

 

Ingredients:

2 cups Oats

22 pitted dates

1/2 tsp cinnamon

1/2 cup water 

    --> Additional ingredients (add about a 1/2 cup mix of whatever you would like)

         In this version, I added 100% cacao chocolate chips, dried cranberries & pumpkin seeds.

Supplies:

Cuisinart Food Processor

Medium Bowl

Nonstick 10-Inch x 4-Inch Loaf Cake Pan

Tin foil

Directions:

Use your cuisinart to chop up 1 cup of oats, 11 pitted dates, 1/4 tsp cinnamon, & 1/4 cup water.

Once it starts to clump together stop the cuisinart and stir with a spoon. Pulse again and then dump mixture into medium sized bowl.

Add remaining 1 cup of oats, 11 pitted dates, 1/4 tsp cinnamon,  & 1/4 cup water into the now empty cuisinart and pulse the same until it creates a batter mixture. Make sure the mixture isn't completely blended, it will work best if there are still small chunks of dates visible.

Dump mixture into bowl with the first batch. Then add your 1/2 cup of additional ingredients on top and stir together until completely mixed.

Once the batter is completely mixed, pack firmly into the baking tray. Finally place tin foil over the tray and put it in freezer for 2-3 hours. 

After freezing remove and cut into strips 1-2 inch strips. Then you will have your bars.

Enjoy or put back in the freezer to enjoy when desired.    :)
