Lettuce Wrap Jackfruit Tacos!
For my first recipe post I am sharing my version of Jackfruit Tacos!
This recipe is so easy to make and takes about 20 minutes.
Perfect for a ladies night or family dinner!
I enjoyed this yummy dinner, this past week, with 3 friends. We drank Stella Artois, which went really well with the meal.
I got all my ingredients from Oryana Community Co-op in Traverse City, Michigan. Note that the ingredients might vary depending on where you shop, you can vary the rice and jackfruit options to what ever your store offers. I aim to shop local, organic and at co-ops. I will share why I shop this way in a future blog post.
Lettuce Wrap Jackfruit Tacos (serves 4)
Taco Ingredients:
2 boxes of Jackfruit Chili Lime Carnitas from Uptown Naturals
1 can of Field Day Organic Black Refried Beans
1 bag of Tasy Bite All Natural Jasmine Rice and/or Thai Lime Rice
Guacamole:
3 avocados
2 roma tomatoes
1tsp garlic powder
1-3 drops doterra essential lime oil
Sea Salt
“Slaw”:
1/3 head of cabbage
Tsp olive oil
½ tsp garlic powder
Salt to tate
Wrap:
Head of lettuce that can easily be a wrap
Or your favorite taco wraps
Salsa of your choice or
Northern Natural Salsa
Chips of your choice or
Sage Valley Gluten Free, Organic, Yellow Corn Tortilla chips
Directions:
1) Wash individual lettuce leaves & set to dry
2) Put out salsa and chips for appetizer if family and/or friends are around
3) Make guacamole
-Mash 3 avocados in bowl leaving a little bit of nice chucks
-Add diced tomatoes
-Add garlic powder
-1-3 drops of lime oil (stir in one drop then add more to taste)
-Sea Salt to taste
4) Make Slaw
-Slice up ½ cabbage into shreds
-Add to bowl
-Add 1 tsp Oil
-1/2 tsp garlic powder
-Sea salt to taste
-Stir well
5) Follow jackfruit recipe on Upton’s Natural Box
-Cook in pan over medium heat for 5-7 minutes
(do not need to add any oil)
-Break apart large chunks of jackfruit into smaller shreds
-Stir occasionally until thoroughly heated.
6) Dump vegan refried beans into sauce pan on medium heat and cook until heated thoroughly
7) Ready to serve
8) Place 1-3 lettuce wraps on plate and layer with jackfruit, refried beans, guac, salsa & slaw
9) Bring your plate, Stella, chips, salsa & guacamole to the table
10) Take a pic and tag @knowbeloveyou<3U
11) Say a prayer thank your family and friends for joining you and enjoy the meal!
As a side we added Fresh Cherries from a local farm here in Leelanau, Michigan... you can add a side of anything else you’d like.
