I LOVE COOKIES
It all started with coffee and a coo coo (COOKIE) after my mom and I would drop my brother off at his elementary school.
I was hooked, age 2, cookies became my happy place— cookies and hanging with my mom of course.
But as I’ve gotten older, my body does not respond well to sugar. Hello, breakouts! So I needed to get creative. How do I enjoy my coffee & coo coo time now?
Well, it’s with healthy “breakfast” cookies like the one below! This recipe is inspired by the ambitious kitchen.
Ingredients:
2 cups muesli
2 large bananas
2 scoops of protein powder
1/4 tsp baking powder
1 cookie sheet
Additional ingredient ideas:
Crushed nuts, chocolate chips. coconut flakes… You decide :)
Directions:
Preheat oven to 350 degrees F.
Mashup your bananas
In a large bowl combined the oats protein powder & baking powder. Mix well.
Then add your mashed banana with oats mixture and combine until smooth. I like to use my hands after stiring to make a propper cookie dough.
Drop dough by large tablespoons onto cookie sheet; flatten a bit with your hands or rubber spatula.
Bake for 9-12 minutes or until cookies are set.
Remove from oven and cool on wire rack.
Cookies will keep in a covered container for a few days, or they can be frozen and reheated. Makes about 16 cookies.
Hunny loved licking the bowl I used to mash the bananas in. She also really wanted to try one of the cookies. I’ll make her one without raisins and protein powder soon. She’s great company in the kitchen!
